    Associate Professor Food Science and Nutrition

    About me

    I joined the exciting Food Science and Nutrition program in the College of Science, Health, Engineering and Education at Murdoch University in April 2020. A major achievement of my last 23 years is my successful integration of and leadership in both research and teaching. Prior to joining Murdoch University I was an Associate Professor at Curtin University where I lectured in the undergraduate and postgraduate Nutrition and Food Science program. I have mentored 38 successful research students, including 9 PhD researchers. I was awarded a Lifetime Fellowship by the Australian Institute of Food Science and Technology (AIFST) and was 2016-2018 Nutrition Division Chair of AACCI (American Association Cereal Chemistry International). The interface between food and nutrition science with an emphasis on linkages between how food is produced and processed, and human nutrition has been a focus of my research. I have expertise in product development and uses my understanding of food structure to extend her research on food quality, sensory evaluation and the health benefits of protein, viscous polysaccharides, resistant starch and fibre consumption. My research on functional fibre, viscous polysaccharides, slowly digestible starch in grains and vegetables has provided evidence on their ability to increase satiety and attenuate postprandial glucose responses. This research is closely aligned with industry in Australia and internationally. I am proud to have collaborated on research projects in Japan (dairy), China (noodles and oats), Turkey (bulgur), Singapore (steamed bread), India (chapatti) and Canada (viscous polysaccharides and nutrition).
